The Company starts in the 1960’s, when Domenico Longhi began a small truffle commerce within a local tavern, located along the high street in front of the Town Hall tower of Urbania. He dealt directly with the truffle hunters, commonly known as “tartofaners”. Fresh truffles intended for sale are brushed and cleaned using a small spatula, which allows for the removal of any soil residue. Truffles intended for processing are carefully washed using a specific machine that sprays jets of cold water under pressure, eliminating any remaining soil residue.
